I can't tell you how much fun it was rocking out these recipes, coming up with things that have never been seen in the history of glorious life. Best part is all the recipes are really easy to make and explode in your face with flavor.

Dipping Sauce
Palm Sugar
Chili powder
Lime juice
Fish Sauce

Mix all the ingredients together with a mortar and pestle, adjusting flavors as needed.

Sticky Rice French Fries
Soaked sticky rice
Frying oil

Strain your soaked sticky rice and steam for about 10 minutes.
Roll your sticky rice in your hands to form a fry shape.
Heat up some frying oil and carefully place your sticky rice fries until cooked through and crispy.
Dip in your dipping sauce and enjoy!

Green Curry Nuggets
1 lb. ground chicken
¼ cup curry paste
2 tbsp fish sauce
Rice flour

Mix your chicken, curry paste, fish sauce and scallions together and shape into nuggets.
Freeze your nuggets for a few hours.
Once frozen coat your nuggets in rice flour and fry until golden brown.
Enjoy with some dipping sauce!

Mango Coconut Frosty
Coconut milk
Frozen mango
1-2 tablespoons sticky rice

Freeze your coconut milk in ice cube trays.
In a blender add 3-4 frozen coconut milk cubes and ¾ cup of frozen mango and sticky rice.
Blend until smooth and creamy and enjoy!

Hot and Juicy Double Laap Burger
1 lb. ground beef
¼ cup chopped cilantro
11 tbsp toasted rice powder
1 tbsp lime juice
2 tbsp fish sauce
½ tsp chili powder
1 tbsp chopped lemongrass
2 tbsp scallions
1 tbsp sliced shallot
¼ cup cilantro
¼ cup mint
½ tsp sugar
Burger buns

Mix your beef, cilantro, rice powder, lime juice, fish sauce, chili powder, lemongrass, scallions and shallots and form into two squared beef patties.
Mix together some more cilantro, scallions and mint. ¼ cup of each. Squeeze in some lime, ½ tsp of sugar, 1 tbsp of fish sauce and a sprinkle of chili powder. Set aside.
Fry your burger patties in a greased pan until cooked through.
Fry your egg.
Assemble your burger with the fried egg in between your beef patties and top with a slice of tomato and herb mix. ENJOY!

Jr. Herbal Sausage Burger
2 hot peppers
½ a Garlic bulb
1 shallot
Sticky rice
½ lb. ground pork
Red curry paste
Oyster Sauce
¼ cup chopped cilantro
1 tbsp kaffir lime leaves
Pepper paste

Gently char your peppers garlic and shallot until soft.
Peel most of the charred skin off your veggies and blend all together until it makes a paste.
Shape your sticky rice into buns.
Mix your pork, red curry paste, oyster sauce, cilantro and kaffir lime leaves. Form into mini patties.
In a greased pan fry your patties until cooked through.
Lightly toast your sticky rice buns in pan until they develop a little bit of color.
Place your patties over your stick rice buns and spread some pepper paste on top. Enjoy!

Thai Spicy Fried Chicken Sandwich
1 Chicken breast
1 tsp coriander seeds
4 garlic cloves
Fish Sauce
Rice Flour
Corn Starch
Frying oil
Steamed buns
Crispy onions
Baking soda

Cut your chicken breast in half and pound out until it flattens out a little.
Mash your coriander seeds and garlic together and toss in a Ziploc back along with the chicken to marinate for about an hour.
Mix 2/3 parts rice flour 1/3 part cornstarch together. Add a dash of baking soda and salt to the mix.
Add water gradually until it forms a pancake batter consistency.
Dip your chicken in the batter and fry until golden brown.
Assemble your sandwich in between steamed buns and top with cilantro, crispy onions and pepper paste! PERFECTION!
